There are fewer things more confusing than learning that buckwheat isn’t actually wheat at all. Except maybe that kasha is always buckwheat, but buckwheat isn’t always kasha. And buckwheat isn’t a grain either, but a seed.

Buckwheat, a.k.a. buckwheat groats, is a naturally gluten-free plant cultivated for its seeds, which cook like a grain. For this reason it’s called a pseudocereal. Quinoa is another example of a seed posing as a grain, as I like to say.
Buckwheat is also made into flour and noodles, the noodles being a staple of Japanese cuisine. Check out my recipe using buckwheat soba noodles here.
Roasted buckwheat is known as kasha. You can buy pre-roasted buckwheat groats (kasha) in the store, but I find it can cook up unevenly. I prefer to start with raw, whether making a recipe like this or a porridge.

Buckwheat can be cooked as a grain, or into a porridge for breakfast. But here I roast whole raw buckwheat with coconut oil, honey and cinnamon for a crispy sweet treat. And I like the Eden Foods organic buckwheat (available at Whole Foods, etc.).
This recipe is one of those things you can make a batch of and keep on hand for various uses.

You can enjoy this recipe many ways:
- stir into oatmeal for some crunch
- use in homemade energy bites
- add to a yogurt bowl or parfait
- add to green salads
- top your fruit bowl
- enjoy as a snack
- garnish desserts
- add to trail mix
- top ice cream

You can also make a savory-ish version by adding a little ground cumin to this recipe. So good! Or omit the cinnamon and do 1/4 teaspoon of curry powder. In this case it’s great to add to salads or grain bowls.

- 1 tbsp coconut oil
- 1 tbsp honey
- 1 pinch fine pink salt
- 1/4 tsp ceylon cinnamon
- 1/2 cup raw buckwheat groats
Ingredients

- heat oven to 350° and line a sheet pan with parchment paper
- melt coconut oil and honey in a small pan or microwave, whisk in salt and cinnamon
- in a medium bowl combine melted honey mixture with buckwheat, then spread out onto prepared pan (leaving some pieces close together which become delicious “clusters” after baking!)
- bake until crispy, about 20 minutes
