Charred Green Beans with Smoked Almonds

If you are looking to up your side dish game for Thanksgiving, I have just the recipe for you. These Charred Green Beans with Smoked Almonds are not your mom’s green bean casserole. They are umami-packed, full of flavor and crunch, thanks to the smoky almonds and crispy shallots. 

This recipe is a breeze to make, but there are three components. Are you game? If so… read on!

First, you make the smoked almonds using whole raw almonds, smoked salt and smoked paprika. These alone are worth the effort. Great for snacking, adding to salads, grain bowls and more. All of 10 minutes.

For the almonds go with raw whole, then chop them for texture. I like India Tree smoked sea salt and this Safinter smoked paprika.

Don’t skip the shallots or almonds, they make the recipe!

Meanwhile, you’ll caramelize some shallots ’til crispy, which takes less than 10 minutes.

Then, in the same pan (hello, less mess!) you’ll char the fresh green beans. Heat some avocado oil on high heat and sear the beans ’til crisp tender, about 7 minutes.

Lastly, sprinkle with flake salt and serve.

These are the perfect addition to your Thanksgiving table, for vegggie-vores and carnivores alike. And they may just turn green bean naysayers into green bean lovers.

Instructions
  1. make smoked almonds: heat oven to 350° and line a small sheet pan with parchment paper; in a small bowl mix oil with salt and paprika, toss with almonds and bake 10 minutes; cool almonds then rough chop
  2. make crispy shallots: heat a large sauté pan over medium heat, when hot add 1 tablespoon avocado oil, then add shallots and cook until crispy, stirring often, about 5 - 7 minutes (you want them brown and crispy but not burned!); remove and set aside
  3. char green beans: wipe the same shallot skillet out with a paper towel and increase heat to medium-high, when hot add 1 to 2 teaspoons avocado oil (just enough to char beans); add beans, in batches if necessary, and cook until “charred” and bright green and crispy, about 7 minutes (stir occasionally and watch carefully to not burn)
  4. to serve: toss beans with shallots, almonds and flake sea salt to taste
