If you are a fan of chocolate turtle candies you will love these Salted Caramel Pecan Turtle Cups. Just a few ingredients and a few minutes in the kitchen and you have the satisfaction of homemade turtles!
For those unfamiliar with the delight that is a chocolate turtle, allow me to introduce you. Turtles typically have chocolate, caramel and pecans.
Many of the store-bought ones can be filled with undesirable ingredients, such as “modified milk ingredients” (whatever that is), soy lecithin, palm oil and more. Say what!?
So I say make your own healthy but tasty ones at home and I have an easy recipe for them.
Ingredients for Salted Caramel Pecan Turtle Cups…
For this recipe you’ll need only a handful of ingredients:
- dark chocolate
- pecan butter (or nut butter of choice)
- maple syrup
- pecans
- salt
The pecan butter + maple combo tastes like caramel
For the chocolate I went with my favorite Theo dark chocolate, which you can find at most supermarkets. I like the 70% dark chocolate or the dark chocolate with coconut.
My number one tip for buying chocolate is to always get the highest quality chocolate. Not the “baking chocolate”, for example, especially in desserts like this. And especially for when enjoying a square or two out of hand.
I always look for chocolate with the first ingredient listed as cocoa beans or cacao, and also chocolate that does not have soy, dairy or preservatives.
Always use high-quality dark chocolate for best results
The caramel filling is roasted pecan butter and maple syrup.
Don’t have pecan butter? You can sub almond or cashew (or your other favorite nut or seed butter). Or if you want to order pecan butter online try Purely Pecans or Georgia Grinders. Just omit the salt in this recipe if you use a salted pecan butter.
Be sure to add toasted pecans on top for some crunch.
That caramel though!
How to make ‘em…
Now that you have the ingredient rundown, let’s talk recipe. These turtles require just a few simple steps, no baking required.
- melt chocolate and fill cups with half
- freeze to set chocolate
- make and add caramel
- add remaining melted chocolate & toppings
- freeze one last time to set
- eat and swoon!
You can melt the chocolate in a microwave or a double boiler. Then you whip up the easy caramel.
To achieve the caramel like flavor here, I simply mix pecan butter with maple syrup. Easy peasy! The key is to get roasted pecan butter (or make your own!)
Once you have the different layers done you just pop them in the freezer to set and, voila, homemade turtles!
Lastly, add a sprinkle of toasted chopped pecans and a pinch of flake salt on top of the cups for that sweet n’ salty taste.
I like my cups at room temp, but they are also delish cold.
These are great cold or at room temp
I hope you like these Salted Caramel Pecan Turtle Cups as much as I do. They are tasty, healthy, and even a fun project to get the kids to help with.
