make smoked almonds: heat oven to 350° and line a small sheet pan with parchment paper; in a small bowl mix oil with salt and paprika, toss with almonds and bake 10 minutes; cool almonds then rough chop
make crispy shallots: heat a large sauté pan over medium heat, when hot add 1 tablespoon avocado oil, then add shallots and cook until crispy, stirring often, about 5 – 7 minutes (you want them brown and crispy but not burned!); remove and set aside
char green beans: wipe the same shallot skillet out with a paper towel and increase heat to medium-high, when hot add 1 to 2 teaspoons avocado oil (just enough to char beans); add beans, in batches if necessary, and cook until “charred” and bright green and crispy, about 7 minutes (stir occasionally and watch carefully to not burn)
to serve: toss beans with shallots, almonds and flake sea salt to taste
