Chopped mixed greens, nectarines, tomatoes, cucumber, feta, toasted almonds + rice wine vinaigrette

Instructions
  1. make dressing: using a handheld blender and beaker or standard blender, puree all salad dressing ingredients, then season to taste with salt & pepper; alternatively, place all ingredients in a jar and shake vigorously to emulsify; dressing yields about 1/3 cup
  2. assemble salad: in a large bowl toss salad ingredients with desired amount of dressing, then top with almonds and serve right away
