Coconut Creamed Kale
“Creamed” kale with garlic, curry, coconut milk and toasted coconut

  1. heat a large sauté pan over low or medium-low heat, when hot add oil
  2. add garlic and sweat until soft but do not brown, about 2 minutes
  3. increase heat to medium, add kale and sauté until a little tender, about 5 minutes
  4. in a small bowl whisk coconut milk with curry power, then add to kale and continue to cook until well blended and “creamed”, about 2 – 3 minutes; season to taste with salt & pepper
  5. serve kale warm, topped with toasted coconut flakes
