Coconut Date Rolls
Medjool dates stuffed with nut or seed butter, coated in dark chocolate and rolled in coconut

Instructions
  1. using a small knife, remove pit from dates and open slightly; fill each date with 1/2 teaspoon (or more if desired) of seed or nut butter; you can gently squeeze date together so nut or seed butter stays in
  2. chop chocolate and add to a small glass bowl; gently melt chocolate in a double boiler or in the microwave for 30 seconds at a time until melted
  3. place shredded coconut on a large rimmed dinner plate
  4. using a fork, dip each date in melted chocolate, then roll in shredded coconut
  5. enjoy dates right away or store in an airtight container at room temperature for several days
