Creamy Hemp Seed Citrus Dressing

This bright and flavorful Creamy Hemp Seed Citrus Dressing is helping keep the winter blues at bay. It’s made with mixed citrus, hemp seeds, shallot, a little honey and olive oil. And it’s use goes beyond salads.

I love anything citrus (hello flavor!). And I love hemp seeds (hello plant protein!). So naturally this combo has made this dressing/vinaigrette high on my list of favorites. Not to mention, it’s packed with vitamin C from the citrus and plant protein from the hemp seeds.

Hemp seeds, also known as hemp hearts, are the seeds of the cannabis plant and are highly nutritious. But don’t get excited, these seeds contain only trace amounts of THC, the psychoactive compound found in marijuana.

Hemps, as I like to call them, contain vitamin E and are filled with minerals such as iron, zinc, magnesium, manganese and more.

Just 3 tablespoons of hemp seeds has 10g of protein, and provides 100% of the RDI for manganese, which is important for brain health and nervous system function.

If you’ve never tried hemp seeds I highly recommend. Aside from a nutritious boost, they taste great ~ a little nutty and light in texture. And their use is very versatile, delicious in everything from oatmeal to sauces. I like International Harvest or Manitoba hemp seeds.

I created this dressing to go with my Chopped Mango, Avocado and Macadamia Nut Salad, but it goes great with so many other things.

But, back to this Creamy Citrus Hempseed Dressing…

It’s an easy recipe ~ squeeze some fresh mixed citrus, mince a little shallot, and purée with the remaining ingredients. Dressing! Done! Right!

For the citrus I go with equal parts orange juice (navel or blood orange), lime and lemon juice. And puréeing the hemp seeds actually makes this dressing creamy without the addition of dairy or a ton of oil.

Puréeing the dressing also emulsifies it (i.e. helps it bind). I use my immersion blender to make most all of my salad dressings.

TIP: purée your vinaigrettes and salad dressings to help them stay emulsified

I like a combo of orange, lime and lemon in this dressing

Store the dressing in the fridge in an airtight jar for a few days, give it a shake before using, and you’re bueno.

This recipe yields ½ cup, so feel free to double so you have extra on hand a few days. Then you’ll be winning with healthy salads all week long.

Citrusy and creamy hemp seed dressing, perfect for salads, grain bowls and more
Instructions
  1. puree all ingredients in a beaker with an immersion blender, or in a low-powered blender, season to taste with pink salt and fresh-cracked black pepper
  2. store in a jar in the refrigerator for a few days
