heat oven to 350° and line a sheet pan with parchment paper
melt coconut oil and honey in a small pan or microwave, whisk in salt and cinnamon
in a medium bowl combine melted honey mixture with buckwheat, then spread out onto prepared pan (leaving some pieces close together which become delicious “clusters” after baking!)
bake until crispy, about 20 minutes
