There is toast. There is avocado toast. And then there is this epic Egg and Avocado Toast with Sumac, Dukkah and Sunflower Seeds.
This is one of the many recipes I share where I offer multiple variations, interpretations and iterations. i.e. Make it your own creation, as just about anything works!
For me, I choose a bread such as Free Bread moxy which is vegan and gluten-free bread. Or I go with Canyon Bakehouse 7-grain, which is gluten-free but contains eggs. Just depends on my mood.
Here are some of my suggestions for various healthy breads that are allergy free and dietary restriction-friendly:
- whole grain, no dietary restrictions: Food for Life Ezekiel Whole Grain and Seed sprouted bread (also happens to be vegan)
- whole grain, dairy-free, soy-free and gluten-free: Canyon Bakehouse 7-Grain (or for sweet recipes also I love their Cinnamon Raisin!)
- whole grain, soy-free and vegan: Food for Life Ezekiel 7 Sprouted Grains
- whole grain, soy-free, gluten-free and vegan: Food for Life Ezekiel Sprouted for Life or Free Bread Moxy
Toasted bread and 8-minute eggs
For the eggs, my two favorite brands of organic eggs are Pete & Gerry’s or Vital Farms. A few tips for quick and easy soft- or hard-boiled eggs:
- let them get to room temp before cooking
- plunge into an ice bath after cooking to stop further cooking
- peel under running water, starting at the larger end of the egg (where the air pocket is)
My last tip for the eggs is to batch cook them so you can have this epic avocado toast on the ready in under 5 minutes every day of the week.
For the avocado, carefully remove the pit: on a cutting board slice in half lengthwise, gently twist to pull apart, then place each half on a cutting board, cut side up. Take the blade of a knife and “tap” pit, then twist to remove. NOTE: please do not do this in your hand ~ people have ended up in the ER by doing so!
You can either mash the avocado or give it a rough chop. I personally like a small, rough chop for more texture.
Avocado, watercress, dukkah, dill & sumac
For spices try any of these:
For the seeds try any single one or combo of:
- sunflower
- hemp
- sesame
- flax
- pumpkin
And for the fresh herbs and/or greens, any of these are delightful:
- dill
- basil
- chives
- parsley
- microgreens
- arugula
- watercress
To assemble, add avocado to toasted or grilled bread, then add egg, then the toppings are up to you… and the variations are endless!

I hope this recipe and variation ideas have gotten your creative juices flowing. And P.S., to make this recipe vegan, just sub tofu eggless “egg” salad using firm or extra firm tofu.

- 2 large eggs at room temp is best
- 2 pieces whole grain bread
- 1 small avocado
- 2 generous pinches flake sea salt such as Maldon, divided
- 1 pinch sumac spice
- 1 pinch dukkah spice optional, see my recipe for dukkah on the blog
- 2 tbsp toasted sunflower seeds
- 1 handful baby arugula
Ingredients

- bring a small pot of water to a boil, then gently submerge eggs and simmer about 6 - 9 minutes (depending on how runny or firm you like your eggs), then immediately blanch eggs in an ice bath to stop cooking
- peel eggs, pat dry, then into slices or quarters, or chop (your preference)
- chop or mash pitted and peeled avocado with one pinch of the flake salt
- toast or grill bread
- top bread with mashed avocado and egg, then sprinkle with another pinch of salt, spices, seeds and arugula
- recipe makes 2 small or 1 hearty servings
