Egg and Avocado Toast
Toasted whole grain bread with avocado and flakey sea salt, jammy egg, sumac, dukkah, toasted sunflower seeds and arugula

Instructions
  1. bring a small pot of water to a boil, then gently submerge eggs and simmer about 6 – 9 minutes (depending on how runny or firm you like your eggs), then immediately blanch eggs in an ice bath to stop cooking
  2. peel eggs, pat dry, then into slices or quarters, or chop (your preference)
  3. chop or mash pitted and peeled avocado with one pinch of the flake salt
  4. toast or grill bread
  5. top bread with mashed avocado and egg, then sprinkle with another pinch of salt, spices, seeds and arugula
