crumbled almond ricotta

cilantro leaves
chopped if preferred
Instructions
in a small bowl whisk eggs with one tablespoon of filtered water, season to taste with salt & pepper
in a medium nonstick skillet, cook eggs over low heat (or med-low at most) until just set, 5 minutes or less
toast tortillas over an open gas range flame on medium heat, about 20-30 seconds per side (or warm according to package directions)
to assemble, top tortillas with scrambled eggs, avocado, everything seasoning, almond ricotta “queso” and cilantro, and enjoy right away
