When you can’t decide between PB&J Cups and Crispy Almond Butter Cups, Everything Chocolate Cups are the delicious result. They have dark chocolate, a little peanut butter and jam, and a delicious crispy topping that takes this healthy treat from good to delicious!
As I said, this recipe came from my inability to decide what I wanted to satiate my (forever) sweet tooth. If you’ve made my Superfood PB&J Cups or Crispy Almond Butter Cups, you’ll see this recipe has the best of both recipes.
TIP: for best taste, use only high quality chocolate for this recipe (and others)
Recipe ingredient deets…
For this recipe you’ll need a few things you likely already have on hand:
- dark chocolate
- nut or seed butter of choice
- jam flavor of choice
- toppings of choice (ideas below!)
I went with my favorite bar, Theo dark chocolate. I like to enjoy a square are two after dinner, and I also use it in desserts like this. You can find Theo at most supermarkets.
If using almond butter I like Once Again creamy roasted. Once Again also makes peanut butter, and a delicious sunflower seed butter if you have a nut allergy.
A good rule of thumb, regardless of the brand of nut or seed butter you buy, is to look for one with as few ingredients as possible. Just 100% roasted nuts/seeds is the best way to go, maybe with a little salt.
I like peanut butter and blueberry jam in my cups
Same with jam. You should look for the fewest ingredients as possible, with fruit being the first ingredient listed (not sugar). I love the brand Rigoni di Asiago.
Now, on to the toppings! Go wild, have fun, get the kids involved. Any combo of the below would be delish, or just do one to keep it simple.
Try one or any combo of these on top of Everything Chocolate Cups:
- chia seeds
- hemp seeds
- sesame seeds
- toasted nuts
- toasted coconut
- puffed quinoa
- puffed rice
- cacao nibs
- granola
- sprinkles
- flake salt
Add your favorite toppings and get the kids to help
Recipe method rundown…
Once you make the hard decisions on the fillings and toppings, the recipe has a few simple steps:
- melt chocolate and fill cups with half
- freeze to set chocolate
- add nut butter & jam
- freeze to firm
- add remaining melted chocolate & desired toppings
- freeze one last time to set
- bliss out!
I like my cups at room temp, but they are also delish cold.
