Mango Pops

Call these poppers, or call them energy bites or donut holes… whatever you call these healthy Mango Pops you’ll want to pop them in your mouth like candy. 

These Mango Pops are made with dried mango, coconut, toasted cashews & macadamia nuts, hemp and chia seeds. They are perfect for a snack or healthy dessert, and are a (tropical) breeze to make. And they taste like the tropics with the mango and coconut!

This recipe really is simple, and as with most of my recipes can be modified according to taste. Not a mango fan? Try it with other dried fruit (ideas below).

The coconut is both in the pops and used to roll them in after forming. You can lightly toast the coconut or leave it raw. However, toasting it brings out the sweetness and gives it a nutty flavor. Be sure to buy the fine shredded coconut, versus the flakes or chips (better for blending and rolling).

As for the cashews and macadamia nuts in the recipe, you can also toast those before using. By the way, I use cashews and macadamias because they are some of the most tropical nuts. Plus, they are delish!

To toast the nuts I recommend baking them on a large sheet pan at 350° for 8 minutes or until lightly toasted. You can add the coconut to the oven the last 2-3 minutes, just watch carefully so it does not burn!

To add more protein and nutrients I add white chia seeds and hemp seeds to the recipe.

Other dried fruit works in this recipe as well:

  • apricots
  • apples
  • dates
  • figs
  • pineapple
  • or try a combo of dried fruit

Be sure to follow the step of soaking the dried fruit in warm filtered water for about 5 minutes before using in this recipe, otherwise it will be hard to blend.

And speaking of blending, you can toss everything in a food processor, grind a few minutes then you’re ready to rock and roll, literally! I use this mini 3-cup Cuisinart food processor for this and so many recipes.

Since this recipe is so quick and easy to make (with no real chopping required), you can get the kids in the kitchen to help.

  1. heat oven to 350° and toast nuts until lightly brown, about 8-10 minutes
  2. optional step: toast coconut in the same oven 2-3 minutes, watching carefully (it burns quickly!)
  3. soak chopped dried mango in warm filtered water for 5 minutes, then drain and pat dry
  4. in a food processor grind nuts to reach a fine consistency, then add mango, HALF of coconut (1/2 cup), seeds and a pinch of sea salt; you may need to scrape down sides several times
  5. once you reach a smooth consistency, roll large tablespoon size pops to form about 10, then roll in remaining coconut
  6. store in an airtight container for a week or more in the refrigerator, but enjoy at room temp
