These Picnic Sandwiches with Whipped Avocado are the perfect thing to take on your next trip to the park, beach or mountains. They are even great to serve for a party.
I mean, can you really go wrong with a crusty baguette slathered with whipped avocado? I think not, which is why these sammies will be a hit at your next pool party, picnic or brunch.
The recipe takes all of 10 minutes to make. Just slice up some summer fruit (yes, fruit) ~ fresh tomatoes and cucumber, plus red onion and mixed greens. And that’s it, you’ll have “gourmet” sammies in no time.

Let’s talk about tomatoes…
With tomatoes, it’s always best to source from a farmers market when you can, and buy them only when they are in season, i.e. summer.
Too often, grocery store tomatoes are mealy and less than flavorful. This is because they are picked before they are ripe and then refrigerated, which changes the flavor and texture of the tomatoes.
My other tomato tip is to salt after slicing, whether for sandwiches or salads. This concentrates the flavor and draws out the moisture. I slice and salt and allow them to drain on paper towels. Same tip goes for cucumbers!

The Whipped Avocado recipe I came up with for these sammies is the perfect sandwich spread. It also happens to be great as a taco topper, dip, or to just eat by the spoonful (true story).
As for the other sandwich toppings, I keep it simple with sliced fresh cucumber, red onion and spring mix. But feel free to mix it up according to your taste. For example, sub arugula in place of spring mix greens, which goes great on these sandwiches.

- 1 12" baguette
- 1 ripe tomato
- 1 small seedless cucumber or half an english cucumber
- 1/2 each red onion sliced thin
- 1 cup spring mix greens
- 1 recipe Whipped Avocado with Lime, Herbs & Sea Salt see link above
Ingredients

- slice baguette in half horizontally and separate the two sides (laying with cut sides up)
- spread desired amount of whipped avocado (recipe link in blog post) on one or both sides of bread, then layer sandwiches with tomato, cucumber, red onion and greens
- add top of baguette back to sandwich, then slice into quarters to serve
