Rocky Road Stuffed Dates
Medjool dates filled with almond butter and vegan marshmallows, topped with melted chocolate and toasted almonds

  1. heat oven to 350°, line a small pan with parchment paper
  2. fill each date with about 1 teaspoon of almond butter (or more if if desired), top each date with two marshmallows, then sprinkle chopped chocolate and almonds evenly over dates
  3. bake until chocolate melts and almonds are lightly toasted, about 8 minutes, serve warm
