These Salted Date Caramels are the easiest caramels you will make. Just a handful of ingredients, 5-ish minutes of prep time, and voila!
What goes better together than chocolate and caramel? Or sweet and salty? Or chocolate and nuts? This dessert/treat has all of these combos, and it’s also healthy. Bonus!
Here’s what you’ll need for Salted Date Caramels:
- medjool dates
- almond butter
- maple syrup
- dark chocolate
- flakey sea salt
Top caramels with flake salt, toasted coconut or hemp seeds
Of course, you can make substitutions that suit your preference or using what you have on hand. For example, if you prefer peanut butter versus almond butter roll with that. Or, if there is a nut allergy in the family, sub sunflower seed butter.
Maple syrup goes great here, but honey would also work. And don’t love dark chocolate? Go with white or milk chocolate.
If you go with dark chocolate I like Theo 70% dark chocolate. It is my favorite for recipes and eating out of hand because it is very high-quality, affordable, and has a smooth taste (plus the ingredients are pure). You can find Theo bars in most grocery stores.
Other toppings for the caramels could include crushed nuts, toasted coconut, or even hemp seeds. It’s all about that texture!
Add everything to a food processor to make caramels

This is an easy one bowl dish recipe (well, minus the melted dark chocolate). You just toss everything in a small food processor and pulse to make the “caramel” filling.
Then shape the caramel into round shapes, dip in the melted dark chocolate, add flake salt and freeze a few minutes to set. And that’s it, Salted Date Caramels!

- 8 each medjool dates pitted
- 1 tbsp almond butter can sub peanut or sunflower seed butter
- 1 tsp pure maple syrup
- 1/2 cup chopped dark chocolate or chips such as Theo 70%
- flakey sea salt
Ingredients

- soak dates in warm water for 10 minutes to soften, drain
- add dates, almond butter and maple syrup to a small food processor and pulse until a well-blended “caramel", scraping down bowl as needed
- melt chocolate in the microwave in 30-second increments until melted, about one minute total (alternatively melt in a double boiler)
- form caramel into round “turtle” shapes and, using two forks, dip in melted chocolate
- place caramels on a parchment or wax paper lined plate and put in freezer to set for 10 minutes, adding flake salt halfway through freezing (you want to let the chocolate cool a little bit before adding flake salt, otherwise it will melt)
- serve and store Salted Date Caramels at room temp
Recipe makes 4 caramels and can be doubled to yield more
